- Assist the chef in overall kitchen work, organize and direct all processing and technical work;
- Do a good job in labor allocation, have a comprehensive understanding of subordinates, keep close contact with various departments, and arrange work positions reasonably;
- Be responsible for the shifts, rest, and attendance records of kitchen staff, and supervise the quality and storage of products;
- Be familiar with and master all supply conditions, supervise the purchase plan of supply sources, and the storage of various sources to prevent the deterioration of raw materials;
- Control food costs, often investigate and understand the market supply in and out, the product prices of other catering companies with the chef, store manager and finance department purchaser, and do a reasonable pricing of the menu to master a good gross profit margin, use various raw materials reasonably, reduce waste, and make the best use of everything;
- Grasp the quality of food, strictly control the acceptance checkpoints, check the specifications frequently, supply quickly, be orderly, and be anxious for customers;
- Do a good job in the management and technical training of subordinates, improve the technical level, maintain the company's characteristics and flavor, frequently carry out technical research and development and innovative styles, increase the variety of colors and patterns, constantly introduce new ideas, and create distinctive food and flavors;
- Pay attention to the hygiene of food, utensils and personal hygiene of kitchen workers, as well as their appearance and work style;
- Communicate and coordinate with the front office management team more often and understand customer opinions;
- Operate safely and in accordance with regulations, check the operation status of equipment, the use of tableware and utensils at any time, and maintain, maintain and replace them in time;
- Strengthen safety knowledge training, such as fire prevention, scalding prevention, and fall prevention;
